Apple Pie at Sunset



Psalm 17:8 NKJV

8 "Keep me as the apple of Your eye;
Hide me under the shadow of Your wings"


One of the things I really wanted to find while we were on our trip to north Georgia was some fresh apples.  My sweet daughter in law googled apple orchards until she found a place near where we were. Fortunately they were open on a Monday, but their supplies and choices were pretty picked over. But we we were able to get a decent bag full of apples to bring home and divide up between us.
Today my hubby and my son who lives at home suggested that it might be a good idea to use those apples up before they go bad...and wouldn't an apple pie be a good way to use them???
Of course, I said cheerfully!  I love baking apple pies on a Sunday afternoon!  Well, maybe I didn't exactly say that, but nevertheless, I agreed that the apples needed to be used and an apple pie would be just the thing! Even saved a few apples for eating later.

So what could be better than eating a warm piece of fresh apple pie on the back porch and watching the sun go down?


Nothing could be better than that, unless there was a scoop of vanilla ice cream on top!


And the sunset did not disappoint us!




I hope you have had a day where you know that you are like the "apple of God's eye", and that He is always hiding or protecting you under the shadow of His wings. He is always there for you, no matter what you are going through.

    1. I think we were almost too late. October would probably be a better month to find good fresh apples, but these were good enough, and the pie was delicious, if I do say so myself! LOL. Thank you! Hope you have a great week as well.

    1. Thank you, Penny. Apple pie is my favorite. I usually get one for my birthday in September, but my sister wasn't able to come visit and bring one to me. So she is promising one for Thanksgiving, but said it most likely will come from "Costco". Which is fine. But when the guys said they would like an apple pie, I couldn't resist. It did turn out pretty good! My son contributed the ice cream.

  4. Perfection! Who doesn't love apple pie?! My neighbor used to be a seasonal resident and always brought me more apples than I knew what to do with when he would come down for the winter. I made apple everything you can think of, including of course many apple pies. There were so many that I would still have to bring bags of apples in to share with my coworkers. I really miss that.

    1. Oh, that would have been a very lovely problem to have...so many FRESH apples! They taste so much better than what we can get in the stores, and the flavor of my pie was really so delicious. I would love to be living close to apple orchards...or even a neighbor who brought apples from the orchard. What a treat!

    1. Yikes! That's a long time ago! I must tell you I cheated a little by using the Pillsbury pie dough pastry that comes in "rolls" in a box. I try to keep some on hand in the freezer just for such an occasion. They are pretty good, although not as good as a homemade crust, but when someone wants pie on a Sunday afternoon it sure does help to not have to drag out all the flour, rolling pin, etc.! I am glad you enjoyed the song.

  6. If only I had known that you had fresh apple pie ready. I would have brought some of my homemade ice-cream and we would have had a feast.. The sunset was a lovely sight.

  7. We went to our nearest apple orchard on Saturday. The grands had a great time and there was even some left over snow from last weeks storm. I have a few pics on my blog. I remember singing that song Through It All when I was a youth. I miss hearing hymns. Our church sings mostly modern praise and worship but there is nothing like a hymn. Can you believe I have never made a pie? I have made and apple betty/crsip and the family loves that. We picked some Arkansas black apples, I never even heard of them. They are dark like plums, firm and sweet. They were great in a salad. Enjoy your week!

    1. Oh, it sounds like your family had a great time. Did you say "snow"? Really? I though you lived in California? I will have to go see your picures. And now, you need to bake an apple pie! I did cheat a little on this one by using the Pillsbury pie pastry that comes in a box. You can find it usually in the dairy section of the grocery store. I keep some on hand in the freezer for such an occasion as this. But my mother would never approve. She was the queen of pie baking! Those Arkansas black apples sound good! I love apples in a salad!

    1. Oh, Martha, I do love some cherry pie as well, but it is so hard to find good pie cherries. I don't like those ultra sweet cherry pie fillings. Gotta have the sour cherries for a good cherry pie. Haven't had one in years. The cans of the cherries are so expensive and you have to get at least two to make one pie. But yes, the Georgia apples were great and the pie is delicious! I may have to have another piece for lunch! LOL. So much for my diet!

  9. I was just reading through the last couple of your posts. Oh my...praying for all those health/covid needs. I don't think anyone is untouched by it at this point. Our daughter and son-in-law are to be tested this morning. Praying the tests are negative, but prepared for the opposite since it is really spreading at our son-in-law's workplace. Your apple pie is undermining my 16 hour fasting...it looks so good and now I'm hungry! I do love that hymn. God really has been there for me through it all. Even when I didn't know him and didn't know it...I can look back now and see it. Thanks for sharing it. Have a blessed week, Pam!

    1. Oh Stacy, I do pray your kids are okay. You are the second person here this morning with adult children testing for Covid. See Sandy below. That is really concerning. Especially with Thanksgiving coming next week. I am sorry to tempt you with the apple pie. Hang in there with your fasting. You can do this. And yes, Andre' Crouch's "Through it All" has been there with me "Through it all" many years. God has been there with me through many tears and sorrows and questions for tomorrow. He is still there and will NEVER leave or forsake us, so let's just keep trusting in Him. He's STILL in control! Hope your week is blessed as well.

  10. Your apple pie at sunset looks amazing. I know my hubby would have appreciated it as well. I am not an apple girl. Love apples, but not in any kind of dessert. I know- it's crazy. Now, peaches...that is another story. I love your sunset too. My home gets sunrises. I am not a morning person, but I often wake up in my older age years and catch a glimpse. My daughter has tested positive for Covid. It has been running through their office, so if I am not around for a few days don't think I have forgotten you. She is fine for now, but deeply worried about her son and hubby.

    1. Oh I am SO sorry to hear that your daughter has Covid, and I truly pray for you and your family since I know you have spent a lot of time together. I know you said Tucker wasn't feeling well last week, praying he is okay now. Please stay safe. I also love peaches and would love some really good fresh GA peaches and a peach cobbler. I never could find any good ones this year and was disappointed to not have my annual peach cobbler. Take care and please stay well. Will be praying for all of you.

    1. I wish I could have visited with you and all our other friends that live in the Ga/TN area. There are quite a few! If I had been in the driver's seat we might have done that, but with our kids in charge of this trip and my hubby also co-pilot, I had no chance of taking little side trips. Maybe someday I can talk hubby into it. I sure would love to do that. Or if there was a central location where we could all gather and meet in one place at the same time, wouldn't that be a hoot? I hope we don't have to wait until heaven to meet!! But if that is the case, we will have all of eternity to get better acquainted. Until then, I'm glad we still have this. Have a blessed week.

  13. Oh, how I love apples. Everything looks SO GOOD. Yum! And such a tranquil view from your porch. We have piney woods with lots of nature. The sunsets are spectacular down through the woods. Makes me smile for sure. God is good to let us 'rent' His land for awhile until I'm with Him forever.

  14. Through it all....certainly true!! Oh my, that apple pie looks so good. It was one of my cravings when I was pregnant with our oldest daughter. Loved it then and really love it now. And, what a wonderful place to sit and enjoy every bite!

  16. Pam, the pie looks amazing, as does the view. Although, I'm not much for apple pie...I prefer gooseberry, strawberry, strawberry-rhubarb, peach, and french silk.

    1. Oh my, gooseberry? Strawberry Rhubarb? French Silk? Wow! Those are some exotic pies! LOL. Never had a gooseberry pie. I am not too sure what a gooseberry is, although I have heard of it. I had a bad experience one time with the strawberry rhubarb pie...I like it so much I ate to much and regretted it greatly all night long...so I've never had any since. French silk...I've had that, but it is is bit too rich for me. I'm just a plain old apple pie, cherry pie, peach pie, pumpkin pie and occasional coconut cream pie kind of girl! LOL.

When I was at Truett McConnell College, Andrea Crouch came and I remember him singing this song. I needed to be reminded of these lyrics, especially tonight.❤️

  18. I don't know which I am longing for the most...that delicious looking apple pie (with ice cream, of course) or that beautiful, serene setting!!!! I hope to have time in the next day or two to listen to that sermon. We are without a pastor right now and I'm on the Pastor Search Comm. It will be a hard job and I do pray God has just the right man earmarked for us:) Thank you so much, Pam, for dropping by my blog and leaving such a sweet comment. I so agreed with what you said about social media! Someone mentioned to me recently that sometimes it is sooo hard to be kind...and I do agree with that in that it can be very difficult to be kind to those we struggle with or those we disagree with or those who have not been kind to us. But I also commented to this person that often kindness is sooooo easy...IF we just take the time to think about it and act:) Enjoy that apple pie as long as it lasts, but enjoy that porch even more:)

    1. I will be praying for your search for God's special man that He has chosen to serve as your Pastor. My husband is a retired pastor, having served many years in the ministry, and so we know what it is like to be on the other end of that "search". I am sure there is a man out there who is also praying for God's direction in His life to the right place and congregation where he can serve the Lord and shepherd the flock and help lead souls to Christ. The most important thing you can do is PRAY and seek God's leading before you act on any person. He will direct your steps and you will know when you have found "the one" He has chosen for you. It would be nice if God would just make it simple and say "here he is", but often we have to use our faith and trust gifts and let God show us how to find that person who will play such an important part in the lives of your congregation and community. I will be praying for you. And as a former pastor's wife, let me say that "being kind" to your pastor and his wife and family is one of the most important things you can do for them. Have a blessed and wonderful day, and keep me posted about your search!

  19. I am going to try making a sugarless apple pie for myself with puff pastry for Thanksgiving. Never made one without brown sugar. I know Truvia makes a substitute and i might give that a try. Very pretty photos!
