Rainy Sunday Afternoon = Cookie Baking Time!


As you know, on rainy afternoons I often find myself in the kitchen baking up something good to eat! (Click on this link for "Things to Do on a Rainy Day") This afternoon we had one rain storm roll through after another...fortunately the power didn't go off...and it was a perfect afternoon for baking some cookies! (Click on this link for another rainy afternoon of cookie baking with my son) Although I couldn't convince my baker son to assist me this time, he did come take a few pictures on his cell phone camera when the batteries died on my camera after just one picture!   So we were able to capture this delightful rainy afternoon adventure to share with you!

I'm sorry you can't smell the wonderful cookie aroma that is currently wafting through our house....making me drool for another warm cookie fresh out of the oven! I also regret that you are not here with me to taste these delectable Oatmeal Cookies along with a cup of tea.  Someday you will just have to come on over and see what's cooking! (Better wait for another rainy day, however!)

Ok, here we go!  All the ingredients are ready and waiting!
I love homemade Oatmeal Cookies probably more than any other cookie!
Somehow I have convinced myself that they are actually good for me! You know, the oatmeal,
raisins, chopped walnuts...those are all good things, right?
Never mind that there is also 2 cups of brown sugar and a cup of shortening in there...
along with the eggs, flour, salt and baking soda. Oh, and the Watkins Vanilla (double strength!)
Did I forget anything?
Oops, I just noticed that I had faintly written in 1 Teas. of Cinnamon...and I left it out this time! I knew I'd forget something!
But they were still good.

This is my favorite Oatmeal Cookie Recipe.  Today I made one alteration.
I did not mix in the raisins with the whole bowl of dough. 
Instead I put a few raisins on most of the cookies,
and then put some "Craisins" on a few others for variety.
They turned out really good!!
Oh, I also used the Crisco "Butter flavored" shortening
instead of the regular shortening, since we had bought
some by mistake and
needed to use it up!  It added a good flavor to the cookies as well!


The finished product! They sure were good!

    I love oatmeal cookies! I don't do a lot of baking in the summertime as it is too hot but your cookies sure sound good about now. I imagine I will have to bake up a batch. Hope you have a beautiful day.

    1. Too hot in PEI? I guess we all adapt to what is hot in our own region of the world! I agree, I don't usually do much baking in the summer either, but on a rainy afternoon it just seems right! And yes, they were sooooo good! You must have some with tea! Pretend we are sharing some together! I am at work right now, but I can dream! :) (Break's over...back to work!) LOL.
